The very fine lees are matured in a stainless steel tank until bottling. .
Viticulture
The grapes for this wine come from a vineyard called La Serna in the municipality of Nava del Rey. The 2 hectare vineyard was planted in 1936 using the goblet training system. The production is very low, only 4,000 kg/ha.
Harvest
The harvest takes place in September and the grapes are hand-selected in the vineyards before being transported to the winery, under the supervision of oenologists, on small trailers with a capacity of less than 1,000 kg.
This white wine comes from a beautiful vineyard planted in 1936 in Nava del Rey, Valladolid.
Clear, fresh, complex and explosive, this wine is full of floral aromas with hints of tropical fruit. It is opulent, but at the same time has a balanced acidity that gives it longevity and freshness. Very persistent in the mouth, with a slight bitter nuance at the end, typical of the grape variety.
The juice ferments in new French oak barrels, where the wine then matures on fine yeast residues for about six months.
