Maturation
In November/December the wine is transferred to new French oak barrels, where it matures for 24 to 30 months.

Viticulture
The grapes come from our vineyards on the estates of Corderilla, Carravalcavado 2 and Carraboada 2. The yields in these vineyards vary between 3,000 and 5,000 kg/ha. Loess Collection is made with carefully selected grapes from these three vineyards, chosen based on optimal analytical and tasting parameters. In this way we can determine the perfect moment of harvest, when the grapes have reached their maximum ripeness, to produce the most prestigious wine of our bodega.

Harvest
Once the grapes are selected, they are harvested by hand and transported to the winery in crates of up to 20 kg to avoid damage to the bunches. Here a second selection takes place before the grapes go into the tanks.

After destemming, the grapes are placed in stainless steel tanks, where they first undergo a cold maceration before alcoholic fermentation begins. The primary fermentation takes place at a maximum temperature of 28°C. The secondary or malolactic fermentation takes place in new French oak barrels with a capacity of 225 or 500 litres.
