Maturation
After fermentation, the wine, together with the fine yeast residues, undergoes continuous bâtonnage (regular stirring of the fine yeast residues to keep them in suspension).
The aim of this is to create a fuller mouthfeel and enhance the aromatic profile of the wine. The wine is bottled twice a year, in January and June


Viticulture
Thanks to the unique soil, the grapes for this wine come entirely from a 4-hectare vineyard in the municipality of Rueda. This vineyard, planted in 1998, is planted along a low vertical espalier on drip-irrigated land overlooking the Duero River. The soil consists of sand and pebbles covering limestone and clay, where the roots of the vines grow.

Harvest
The grapes are placed in stainless steel tanks, where a first maceration takes place for several hours at a temperature below 8°C. The must is then pressed and the juice obtained is transferred to stainless steel tanks, where it is clarified by racking (removal of solid particles from the must). The resulting clear liquid then undergoes alcoholic fermentation, also in stainless steel tanks, at a temperature of around 16°C.
